Pineapple Polynesian Ribs

 

This recipe is from Disney Editions new book EAT LIKE WALT:  the Wonderful World of Disney Food by Marcy Carriker Smothers.  These ribs were a favorite at the Tahitian Terrace from 1962 to 1993 along the shores of Jungle Cruise in Adventureland.

Serves 4
Ingredients
2 C Ketchup
1/4 C soy sauce
1/4 C pineapple juice
1/4 C crushed pineapple (fresh or canned)
1/4 C fresh OJ 
1 tsp grated orange zest 
1/2 C brown sugar
1 TBS wine vinegar
3 whole cloves
4 lbs pork spareribs or baby back ribs
Steps
1.  Combine all sauce ingredients in a bowl and refrigerate overnight.
2.  Preheat oven to 275 degrees 
3.  Pour your mixture through a strainer 
4.  Place ribs on a rack in a roasting pan
5.  Roast for 2-3 hours, basting often with sauce until the meat separates easily from the bone.
