Seared Salmon with Strawberry Basil Relish

Recipe from Taste of Home Quick Cooking Annual Recipes


  • 6 salmon fillets (4 oz each)
  • 1 tbsp butter, melted
  • 1/4 tsp salt
  • 1/8 tsp freshly ground pepper

Relish Ingredients

  • 1 1/4 cups finely chopped fresh strawberries
  • 1 tbsp minced fresh basil
  • 1 tbsp honey
  • dash freshly ground pepper


  1. Brush the fillets with melted butter; sprinkle with salt andpepper; heat a large skillet over medium high heat, add fillets, skin side up.   In batches if necessary; cook 2 to 3 minutes on each side or until fish just begins to flake easily with a fork.
  2. In a small bowl, stir strawberries with basil, honey and pepper.   Serve salmon with relish
