🍽️ Easy Wednesday Night Dinner: Creamy Chicken & Spinach Tortellini Skillet

Wednesdays can feel like a race to the weekend, and the last thing anyone wants is to spend hours cooking dinner. That’s why this Creamy Chicken & Spinach Tortellini Skillet is a weeknight hero — simple ingredients, one pan, and ready in under 30 minutes!

🛒 Ingredients:

  • 1 tbsp olive oil

  • 2 cups cooked rotisserie chicken, shredded or chopped

  • 1 package (20 oz) refrigerated cheese tortellini

  • 2 cups fresh baby spinach

  • 1 ½ cups heavy cream (or half-and-half)

  • ½ cup grated Parmesan cheese

  • 1 tsp garlic powder

  • Salt & pepper to taste

  • Optional: red pepper flakes or Italian seasoning for extra flavor

👩🍳 Directions:

1️⃣ Heat oil in a large skillet over medium heat. Add the cooked chicken and sauté for 2-3 minutes until warm.

2️⃣ Add the tortellini directly into the skillet (no need to pre-boil if using refrigerated tortellini). Pour in the heavy cream and garlic powder. Stir well.

3️⃣ Simmer on low, covered, for 8-10 minutes, stirring occasionally, until the tortellini are tender and the sauce has thickened slightly.

4️⃣ Stir in the spinach and Parmesan cheese. Cook for 2 more minutes until the spinach wilts and everything is coated in the creamy sauce.

5️⃣ Taste and season with salt, pepper, and red pepper flakes if desired.

💡 Tips:

  • Want to go meatless? Skip the chicken and add mushrooms or sun-dried tomatoes.

  • Need it lighter? Sub half the cream with chicken broth or use Greek yogurt.
