  • 3 Tbsp. vegetable oil

  • 5 corn tortillas, torn into 2-inch pieces

  • 1 jalapeño, finely chopped

  • 2 cloves garlic, crushed and chopped

  • 1/2 small onion, diced

  • 5 large eggs

  • Kosher salt

  • 1/2 cup mild salsa

  • 1/4 cup cilantro leaves

  • 1 avocado, pitted and thinly sliced

  • 2 radishes, thinly sliced

  • 1/4 cup cotija cheese, crumbled

  • Hot sauce, for serving

🔪 Directions

  1. Heat oil over medium-high heat in a nonstick skillet. Add tortilla pieces and cook until crispy on one side, about 5 minutes.

  2. Add jalapeño, garlic, and onion. Cook until softened, about 4 minutes.

  3. Lower heat to medium-low. Add eggs, season with salt, and stir vigorously until scrambled, about 1 minute.

  4. Add salsa and stir to combine, cooking for 1 more minute.

  5. Remove from heat. Top with cilantro, avocado, radishes, cotija cheese, and hot sauce.
