Ingredients
- 1 24 oz can diced tomatoes, undrained
- 1 15 oz can black beans, rinsed and drained
- 1 15 oz can kidney beans, rinsed and drained
- 1 pd boneless beef chuck steak, cut into 1 inch cubes
- 1 pd spicy pork sausage, cooked and drained
- 2 med onions, chopped
- 1 med sweet red pepper, chopped
- 1 med green pepper, chopped
- 1 cup hot chunky salsa
- 1/4 cup med pearl barley
- 2 tbsp chili powder
- 2 tsp jarred raosted minced garlic
- 1 tsp salt
- 1 tsp ground cumin
- 4 cups beef stock
- 2 cups shredded Mexican chees blend
- corn chips
Directions
- Place all ingredients except the cheese and chips in a slow cooker. cook, covered on low until the beef is tender, 6-8 hours.
- Stir in cheese until melted. Serve chili with chips.
