KEY LIME PIE

Key Lime Pie

Three ingredients plus a crust you can pic up at the local supermarket, create an authentic, delectable pie.  Serve with whipped cream or just by itself.

5 large egg yolks
2/3 c key lime juice
one 14 oz can sweetened condensed milk
a prepared 9” graham cracker pie crust

1.  Preheat oven to 350.
2. In a bowl, gently whisk together the yolks; do not let them foam. Stirring constantly, slowly blend in the sweetened condensed milk and the lime juice.
3.  Poor the mixture into the pie crust and bake for 12 to 15 mins or until set.
4.  Remove the pie from the oven and cool to room temperature on a wire rack.  Chill, covered until very cold.
5.  Serve chilled, cut into slices.
